Dried strawberry seeds (Fragaria ananassa) are perfect as natural ingredients that improve the texture and appearance of the final product. The seeds are very small (around 1mm) and have a crispy texture. The dried seeds can be easily added at any stage of the manufacturing process. Raw strawberries are 91% water, 8% carbohydrates and 1% protein, and contain negligible fat. Strawberries contain a modest amount of essential unsaturated fatty acids in the achene (seed) oil. Although seeds comprise only about 1% of total weight of a fresh strawberry, they contribute 11% of the total polyphenol in the whole fruit. The phytochemicals found in strawberry seeds include ellagic acid, ellagic acid glycosides and ellagitannins.
